1/2 cup whipped cream of choice
1 oz amaretto liqueur

Method:
In a small mixing bowl add whipped cream and amaretto. Mix ingredients until soft peaks form. Set aside and refrigerate.

WINTER WARM HOT CHOCOLATE
Ingredients:
5 oz hot chocolate
.5 oz Tito's
.5 oz Jameson
1 oz Bailey's
.25 oz Peppermint Simply Syrup

Whether you’re looking for a romantic couple’s weekend, a family vacation with the little ones, or a relaxing getaway for one, we have all the holiday cheer to make your stay exceptional.

Spooky season may have passed, but Family Pumpkin Painting continues through November 20. You supply the painters; we supply the paints and pumpkins. On the 24th, Thanksgiving Weekend kicks off with the official lighting of the Barnsley Village Christmas Tree. Glistening lights and live music will delight the whole family, while kids will want to have their wish-lists on hand for a special visit from St Nick. The next day, wake up early to participate in the 5K Turkey Trot Family Fun Run/Walk; then indulge in our lavish Thanksgiving Buffet, featuring holiday favorites and some truly decadent desserts. The fun continues the afternoons of the 26th and 27th with gingerbread house and wreath crafting, and Santa will return to Barnsley again—first on November 27, then once more on December 18—to chat and take photos with all the good little girls and boys at Barnsley. To cap off the holiday season, we’ll be serving a lavish Christmas Brunch on December 25, followed on January 1 by an equally extravagant New Year’s Day Brunch in sumptuous Southern style.

A new year brings about the inspiration to try new things, and that’s exactly what our executive chef, Nicolas Lebas, did when Barnsley Resort guests kept bringing in quail, fresh from the hunt, at on-site Beretta Shooting Grounds. With gastronomic flair, he transformed the common game into a Southern-fried feast with a bit of French flair—Southern-fried quail with an apple slaw stuffing and a red bell pepper glaze.

Barnsley's Southern-Fried Quail Gets a French Twist

January 15, 2021

First, Lebas preps his meal by creating a fresh apple slaw and a sweet glaze made with roasted red bell pepper and sorghum syrup.
Once the quail has been rinsed and dried, he stuffs it with cold apple slaw and wraps it in plastic wrap like a sausage. Using a sous-vide technique from his French motherland, he cooks the bird at 150°F for two hours then sets it in ice water. (You can similarly steam or poach the quail using the same plastic wrap method if you do not possess a sous-vide circulator.)
Once cool, the quail is unwrapped from the plastic, submerged in buttermilk, tossed in a cornflake flour, then fried in canola oil at 350°F until golden brown and finished in the oven by baking at 350°F for 8 minutes.
Finally, Lebas skillfully presents his creation with a generous drizzle of red bell pepper glaze on the plate, cuts the fried quail in half, and garnishes it with a fennel frond salad.

"We all know that sweet tea is the official drink of the South. Some like it sweeter than others, but either way we all have our own recipe. After a long day, there’s nothing better than spicing things up a bit with a spiked sweet tea. In our version, we thought about sitting on a front porch after a summer day in the South with a refreshing drink in hand. The bourbon we selected is Bib & Tucker which is distilled in Colombia, TN. We wanted to choose a bourbon a little further south than the traditional Kentucky bourbons. Bib & Tucker has all of the traditional bourbon notes, with a unique chestnut finish. Next, we selected nectarine as we wanted to stick to our Georgia roots. The nectarine was a nice change of pace from our traditional Georgia peach but still keeps it in the stone fruit family. For the garnish, we decided to take a non-traditional route, adding a pancetta lardon with a cube of nectarine. The pancetta ignites the palate with salty and savory notes that work well with the sweetness of the tea. Lastly, the thyme adds an herbal yet refreshing hint of mint to harmonize all of the flavors, creating a remarkably refreshing "spiked tea" that anyone could enjoy on a hot summer day in the South."


Follow Barnsley Resort’s Lead Bartenders, Blake Black and Bryan Walls recipe for their signature Porch Thyme cocktail to try this sweet and spicy little drink for yourself:

Porch Thyme

Ingredients:

  • 1.5 oz Bib & Tucker bourbon
  • .25 oz lime juice
  • .25 oz simple syrup
  • 2 sprigs of thyme
  • 2 slices of nectarines
  • 2 small pancetta lardons
  • Sweet tea topper

Directions:

  • Muddle fresh thyme and nectarines
  • Add ice, lime juice, Bib & Tucker bourbon
  • Shake
  • Strain over ice
  • Top with sweet tea and stir
  • Garnish with thyme and nectarine
  • Sip slowly & enjoy!

With that said, Executive Chef Nicolas Lebas has the perfect recipe for anyone growing fresh tomatoes, or simply searching for a cooling summer dish: fresh tomato gazpacho.

Featured recently in the Chattanooga Times Free Press, the base of this dish is sweet pickled tomatoes. They are boiled, cooled, and mixed with a combination of plum tomatoes, cucumbers, red pepper, red onion, basil, vinegar, salt, pepper, sugar, tomato juice, and extra virgin olive oil. Once properly infused overnight, these ingredients are blended together and chilled to create a savory and satisfying cold summer soup. Once it’s ready, the gazpacho is best served in deep bowls with a swirl of olive oil drizzled on top. For the ultimate garnish, finish it off with fresh English peas, toasted pine nuts, basil cress, pea shoots, and edible flowers.

If you’re staying safe and sanitizing often, you may begin to notice that frequent hand washing can strip your skin of its natural oils, leaving your hands dry, flaky, and itchy, but don’t worry—the Barnsley Resort spa team has some special tips and tricks to help you stay safe, clean, AND soft.

Nail Oil Soak
We recommend trying a nail oil soak to moisturize and repair your delicate cuticles. Cuticle oil is preferred, but any oil you have at home will do. Simply massage a generous amount into your cuticles and leave it to soak for at least one hour.

Treatment for Dry Hands
Give your hands some much-needed TLC with our simple homemade scrub recipe. Simply mix two teaspoons of sugar with one teaspoon of oil and massage the scrub into your hands, wrists, and nails. Then, apply some cream, cover your hands with a clean pair of socks, and head to bed.

Hand Washing
Hot water and strong soap can dry out your hands, but it’s still possible to stay sanitary while keeping your skin soft. Always use lukewarm water and keep a hand cream or lotion by the sink to apply after every wash. Drinking water can also help you moisturize from the inside out!

Lush greenery grows along the exterior and interior villa walls (the roof was completely removed by a tornado in 1906) and the Barnsley Museum, situated in the home’s once bustling kitchen wing, presents guests with a fascinating combination of Barnsley Family memorabilia and other historical artifacts. It was a hot, muggy summer’s day in Philadelphia when representatives of the Second Continental Congress approved the document that would officially declare the birth of a new nation. Now, almost two-and-a-half centuries later, Barnsley Resort invites you to celebrate this Declaration of Independence with us as we also continue to celebrate our own 20th year as North Georgia’s most elite travel destination. From July 4 – 7, Barnsley will host an Independence Day Weekend with exciting events and fun activities for the whole family. Festivities begin at 9:15 P.M. on Thursday, July 4, with a scintillating sparkler salute, followed by the screening of a patriotic film favorite under the stars. Complimentary popcorn, candy, and lawn chairs will be provided. After a good night’s rest in your luxurious Barnsley accommodations, you’ll have the opportunity to learn the basics of canoeing and kayaking from friendly, expert staff on our tranquil 10-acre lake. Then it’s off to the Beer Garden for lunch and bicycle decorating to prepare for the Independence Day bicycle parade through Barnsley Village. (Though a limited number of resort bicycles will be available, guests are encouraged to bring their own if possible.) Dinner for the evening will consist of a classic American barbecue buffet accompanied by live musical entertainment and culminating in a spectacular fireworks show.
