About Pastry Chef Edouard Fenouil

Chef Edouard Fenouil brings a refined European sensibility and an artist’s precision to the pastry program at MAD Hospitality. Born and classically trained in the Chamonix region of France, Chef Fenouil’s approach marries French technique with imaginative Southern expression, creating breads, pastries, and desserts that bring craft and creativity into perfect harmony.

Before joining MAD Hospitality, Chef Fenouil honed his craft in prestigious kitchens in Paris, London, and the United States, including luxury hotels, acclaimed fine-dining restaurants, and bakeries, where he developed a reputation for sculptural presentation, balanced flavors, and meticulous detail.

At MAD Hospitality, Chef Fenouil oversees the pastry and bread programs across the group’s concepts and is the creative force behind The Patisserie on Main, Madison’s charming French-inspired bakery. There, his artistry comes to life in elegant confectionery creations and inventive seasonal specialties that have quickly made The Patisserie a favorite for guests from around the region.

Known among his peers for his quiet intensity and relentless pursuit of perfection, Chef Fenouil views his craft as a blend of precision, storytelling, and joy, a philosophy that continues to elevate MAD Hospitality’s culinary landscape and Madison’s dining scene.
