Meet the Chef: Shaun Doty, Executive Chef at Jules
With an exciting new restaurant concept opening in late summer, Jules represents Barnsley Resort’s most enriching culinary statement to date, brought to life through the distinct vision of celebrated Chef Shaun Doty.
With a career spanning three decades in the kitchen, Chef Doty is a celebrated culinary talent who brings a global pedigree and a deeply personal connection to the South. Doty is best known for his work at Atlanta’s The Federal, which earned the esteemed title of a James Beard semi-finalist nominee for Best New Restaurant. His passion and prestige have swept the Peach State, where he launched and led several popular Atlanta concepts, including Shaun’s, Yeah Burger and, the beloved Bantam & Biddy in the Ansley neighborhood. Doty’s early days are rooted in the former Ritz-Carlton in Buckhead under the legendary Chef Guenter Seeger, and time spent expanding his skill set abroad at Michelin-starred restaurants across France and Belgium. His culinary journey began in Dallas, was refined at Johnson & Wales University in Charleston, and was further shaped by years in some of the world’s most respected kitchens, where he blended classical technique with a modern Southern sensibility. His food philosophy is grounded in respect for ingredients, for place, and for tradition, and it’s this reverence that guides the kitchen at Jules.
“Everything about Barnsley makes you crave a taste of the South,” said Chef Shaun Doty. “Jules is my answer to that. It’s seasonal, soulful, and intentional — a reflection of where I’ve been and where I want to go, told through the lens of this extraordinary place.”
