The Right Time for Porch Thyme

"We all know that sweet tea is the official drink of the South. Some like it sweeter than others, but either way we all have our own recipe. After a long day, there’s nothing better than spicing things up a bit with a spiked sweet tea. In our version, we thought about sitting on a front porch after a summer day in the South with a refreshing drink in hand. The bourbon we selected is Bib & Tucker which is distilled in Colombia, TN. We wanted to choose a bourbon a little further south than the traditional Kentucky bourbons. Bib & Tucker has all of the traditional bourbon notes, with a unique chestnut finish. Next, we selected nectarine as we wanted to stick to our Georgia roots. The nectarine was a nice change of pace from our traditional Georgia peach but still keeps it in the stone fruit family. For the garnish, we decided to take a non-traditional route, adding a pancetta lardon with a cube of nectarine. The pancetta ignites the palate with salty and savory notes that work well with the sweetness of the tea. Lastly, the thyme adds an herbal yet refreshing hint of mint to harmonize all of the flavors, creating a remarkably refreshing "spiked tea" that anyone could enjoy on a hot summer day in the South."

Porch Thyme

Ingredients:

  • 1.5 oz Bib & Tucker bourbon
  • .25 oz lime juice
  • .25 oz simple syrup
  • 2 sprigs of thyme
  • 2 slices of nectarines
  • 2 small pancetta lardons
  • Sweet tea topper

Directions:

  • Muddle fresh thyme and nectarines
  • Add ice, lime juice, Bib & Tucker bourbon
  • Shake
  • Strain over ice
  • Top with sweet tea and stir
  • Garnish with thyme and nectarine
  • Sip slowly & enjoy!
